The following are three dishes are typically found on the menu in a Mediterranean restaurant. The allergenic ingredients in paella are:

  • Milk – in the chorizo
  • Wheat (gluten) – from the rusk in the chorizo sausage
  • Molluscs – squid
  • Molluscs – clams
  • Crustacea – prawns
  • Sulphites – in the wine, chorizo sausage and the pancetta
  • Some stock cubes contain mustard and celery

  • Lasagne sheets
  • Egg
  • Minced beef

  • Sulphites – in the white wine
  • Wheat – in the lasagne sheets, stock cube and flour
  • Some stock cubes contain mustard and celery

  • Milk – in the mozzarella cheese
  • Sulphites – in the Parma ham
  • Wheat – in the flour
  • Fish – anchovy
